Cheesey Zucchini Casserole

2 tablespoons of salted, sweet cream butter
3 small or 2 medium zucchini
1/2 Sweet Vidalia Onion, sliced
2 teaspoons Italian Seasoning
1 cup of shredded Mozzarella cheese
salt & pepper to taste
1 medium wedged Tomato (optional)

In large skillet, melt butter over medium heat. Add sliced zucchini & onion with seasonings. Saute until zucchini is tender & onion is translucent.
Pour all of this into a round 2 quart baking dish & mix with 1/2 cup of the mozzarella cheese. Bake for 10 minuets.
Top with remaining 1/2 cup of cheese & bake until melted well & starting to brown.
Serve with Breaded Chicken & mashed potatoes.

Chef's Note & Story

You can also use a mixture of zucchini &/or summer squash. And you can also substitute the Olive Oil cooking spray for the butter, however be careful about it sticking.
