Crab Salad Sandwiches With Avocado~ Very Easy

1/4 cup regular or low-fat mayonnaise & yogurt _ !/2 of each to equal 1/4 cup

1 teaspoon seafood seasoning

1/4 cup finely chopped celery

2 tablespoons finely minced chives
2 tablespoons finely chopped white onion
8 ounces crabmeat,( buy a can of claw meat at Trader Joe's )

2 large seeded Honey wheat Hamburgr buns ( Trader Joe's ) or sandwich rolls

split horizontally

1 cup thinly sliced romaine lettuce or arugula

( I use arugula )

1 whole avocado sliced.
lemon slices

Blend mayo & yogurt and seafood seasoning in medium bowl.

Mix in chopped celery minced chives, & onion

Add crabmeat and fold gently to combine without breaking up the crabmeat.

Season to taste with pepper.

Toast the buns with butter ( optional )

Place bottoms of the bun on plates. Layer with

a Mound of crab salad, sliced avocado then lettuce on each.

squeeze fresh lemon on the avocado

Add freah sliced tomatoe ( optional )

Chef's Note & Story

Trader Joe's has a can of crab meat ( claws) for around $8.00 makes about 4 sandwiches or a great salad.

This was served with grill potatoes, grill whole tomatoes & a glass of ice cold Bellini with white peaches. A great summer brunch.
