Ultimate Chocolate Brownies

5 eggs

500g Caster sugar

150g butter

300g Dark chocolate

225g Plain flour

3/4 tsp baking powder

Pinch of salt

Beat the Eggs and the caster sugar together until light and fluffy

Melt the chocolate in a separate bowl, gently in the microwave, checking regularly or in a bain marie. When almost melted, add the softened butter and heat until all melted.

Add the chocolate to the egg mixture and mix well.

Add the flour, baking powder and salt to the chocolate and egg mixture and mix gently.

Pour into a baking tray and bake in the oven for about 30mins at 170 depending on the thickness of your brownie. To test whether it is cooked gently shake the tray from side to side - if the brownie wobbles it needs more time!
