8 Squash Blossoms
2 tomatoes sliced
Blossom Batter:
1/4 cup rice flour
2 cups all-purpose flour
1 tablespoon baking powder
1/2 cup cornstarch
1 tablespoon salt
1 teaspoon cayenne
3 cups soda water
Burrata cheese
Pizza dough ( from Trader joe's )
Tomato sauce :I will post my homemade sauce later on another page.
Preheat a fryer or a deep pot with peanut oil
enhogh to fry the Squash Blossoms
375 degrees F.
Blossom Batter:
Sift together all of the dry ingredients. Whisk in the soda water, a little at a time, until the right consistency is achieved.
The batter should coat the back of a spoon, but some excess batter should run off the spoon. Allow to rest in the refrigerator at least 1 hour before use.
Hold the squash blossoms by the stem. Dip each into the tempura batter, making sure to coat completely. Let any excess batter drip off.
Place the blossom in the oil and fry until golden brown, about 1 to 2 minutes, turning often to brown evenly.
Remove to a paper towel lined plate. set aside,
Oven at 500 degrees for the pizza
Roll out the pizza dough place on a pizza stone. Brush edges of the rolled pizza dough with olive oil.
Spread the pizza sauce over the pizza dough, use enough tomato sauce to cover the pizza.
Add fresh sliced tomatoes, blossoms and chili flakes.
Bake at 500 until golden brown about 12-15 minutes 3 minutes before the pizza is done add the blossom only if you fried the blossoms.
Take pizza out of the oven than scoop fresh burrata on the pizza and drizzle with olive oil. Enjoy,

Chef's Note & Story
If you cannot find Burrata than use fresh mozzarella. Add the Burrata or mazzarella when the pizza is done while it is hot from the oven,
If you do not want to fry the blossom just add it fresh to the pizza with all other ingredients.
