Marinated Marrows

6 marrows
oil
peppermint
basil
garlic
vinegar
salt

Slice the marrows lengthwise.
Fry a few at a time in hot oil.
Drain, put them in layers in a dish, sprinkling each layer with mint, basil and garlic, a little salt, a little oil and a dash of vinegar.
Marinate for 2 hours and serve.
