Toasted Bread With Mushroom

10 ounces champignon mushrooms
1 spoon of flour
1/2 lemon
white wine
2 egg yolks
8 bread slices
3 tablespoon butter
salt
oil

Melt butter, add flour and fry until it is lightly browned, always stirring.

Add the mushrooms, stir, sprinkle with lemon juice, salt, cover and cook for 15mins.

Heat a little oil, fry the bread slices and arrange on a dish to keep warm.

Sprinkle the mushrooms with 1/10 quart of wine and drain, remove from heat and stir in the yolks.

Distribute the mushrooms over the bread and serve immediately.
