Watermelon Salad With Feta Cheese & Mint

4 cups (1/2-inch cubes) seedless watermelon

1/2 cup sliced cucumber

1/3 cup finely chopped pitted kalamata olives
a few fresh mint, torn into pieces ( use hands)

1 tablespoons fresh lime juice

1 tablespoon fresh lemon juice

1/4 cup extra-light olive oil

1/2 cup french Feta or Helena Feta cheese (1/2-inch cubes)

sea salt & black Pepper

In a large bowl, add the cube watermelon, sliced cucumber, pitted olives and fresh mint.

In another bowl, combine lime juice, lemon juice, salt and pepper. Whisk Olive oil into the mixture'.

Toss the dressing with the watermelon mixture.

Add the cube Feta cheese or Helena cheese

Cover with Plastic wrap and chill at least 1-2 hours.

Taste great if the salad is very cold.

Very easy and refreshing salad.
