1 package active dry yeast
2 teaspoons sugar
3/4 cup warm water
1 1/2 cup all purpose flour
1 teaspoon salt
1/4 cup ghee also known as Clarified butter
2 stick of butter ( for making Ghee )
3 tablespoons plain yogurt
melted butter for brushing
How to make Ghee( clarified butter )
Ingredients:
1 pound unsalted butter
Preparation:
Using a small pan, heat butter on medium heat.
On low hear melt the butter and bring to a boil, stirring constantly.
the oil will start to separate . The top will begin to froth, start removing the froth.
the oil will become clear. Once clear, remove from heat and allow to cool for 15 minutes.
After cooling, strain ghee with a very fine strainer into container or use a few cheesecloth. Now you have Ghee.
Preheat oven to 400
Measure 3/4 cups warm water in a measuring cup. Add sugar and yeast.
Allow yeast to soften and stir until yeast is dissolved.
Cover measuring cup with towel and allow yeast and water to froth for 5-10 minutes.
In a large bowl, mix flour and salt.
Add yeast water, yogurt, and ghee* and begin to knead for 5-10 minutes until a dough forms.
Place mixture in bowl coated with oil and coat the dough evenly.
Cover the bowl with a clean kitchen towel and allow to rise in a warm area for about 1 hour or until the dough has doubled in size.
Divide dough into 10- pieces and roll out on floured surface roll into a flat & round shape.
Place rolled out dough on greased cookie sheet or a pizza baking stone and brush with the melted butter.
Cook in oven for 8~ 10 minutes until the bread puffed up and is lightly brown.
Serve naan hot from the oven!

Chef's Note & Story
The dough is really sticky but do not add more flour. It will all come together.
Garlic can be added for a garlic flavor naan. Be creative and add your own spices, cilantro etc.
I love naan, especially garlic naans!
