Vege Bacon And Cheese Cups
2 strips of vegetarian bacon
1/2 bell pepper, chopped
1/4 onion, chopped
1 clove garlic, minced
1 can sliced mushroom, drained
1/2 cup shredded cheese
5 large eggs
Recommended Products
1) Preheat oven to 350C.
2) Coat 6-cup muffin pan with cooking spray or line with paper baking cups.
3) Heat skillet. Cook bacon till crispy. Remove and put on plate to cool.
4) Add garlic, bell pepper and onion to the same skillet. Cook and toss ingredients well with the bacon fat. Cook till ingredients are tender, about 2 mins. Remove and place on a plate to cool.
5) In a large bowl, break all eggs and add mushroom. Beat well. Then add the cooked bell pepper and onion. Mix well.
6) Spoon egg mixture into muffin pan.
7) Crumble the cooked bacon and sprinkle it on top of each egg-muffin mixture. Then top it with cheese.
8) Bake for 20 mins or til the egg is set.
