Tuna Nicoise Salad
3 tablespoons white wine vinegar
2 tablespoons water
1 1/2 teaspoons Dijon mustard
1/2 teaspoon olive oil
1/8 teaspoon freshly ground pepper
1/4 pound asparagus or fresh green beans, cooked
2 small round red potatoes, cooked an cubed
1 stalk celery, chopped
1 baby radish, thinly sliced
2 cups torn fresh spinach
4 cherry tomatoes, quartered
2 pieces buttercup lettuce
1 can tuna
salt and pepper to taste
Recommended Products
1. Combine first 5 ingredients in a small jar; cover tightly, and shake vigorously. Set aside.
2. Cook potatoes in boiling water till cooked. When cooked remove cooked potatoes and blanch asparagus in the boiling water for 1 min.
3. Chop potatoes into cubes. Mix it with celery, radish, spinach and cherry tomatoes. Mix well with half of the dressing.
4. Arrange lettuce on a serving plate. Arrange mixed vegetables, tuna and asparagus on the lettuce. Drizzle remaining dressing on the salad.
