3-4 boneless/skinless chicken breasts
3 Tbsp extra virgin olive oil
3 Tbsp flour
1 c onion, chopped
1/2 c green pepper, chopped
1 garlic clove, minced
1/4 lb fresh mushrooms, sliced
1 can (15oz) tomato sauce
2 Tbsp tomato paste
1/3 c red wine
1 Tbsp parsley, chopped
1/2 tsp oregano
1/4 tsp thyme
salt and pepper to taste
1 small jar pimentos (optional)

Season chicken generously and coat w/ flour
Add olive oil to large sauce pan
Cut chicken into bite-sized pieces
Saute chicken on medium heat until cooked
Remove chicken to bowl (temporarily)
Saute onion, garlic, & green pepper
Add chicken and remaining ingredients
Simmer over low heat for 45 minutes
Serve over noodles if desired
