    Green beans healthy budget meal




  • Ingredients


    3 to 4 pounds fresh green beans (snapped).
    1/4 cup of olive oil.
    6 slices turkey bacon (chopped).
    3 cloves large garlic (chopped).
    2 shallots (chopped).
    Salt and pepper to taste





    Directions


    Cut or snap the ends off the green beans.

    Wash and drain the beans.

    Cut the turkey bacon into small cubes and set aside with the shallots and garlic, until ready to use.

    Bring a large pot of salted water to a boil.

    Add the green beans.

    Let this boil gently for 7 to 10 minutes, until the beans are tender. Drain the beans, reserving about 2 cups of the cooking water.

    In a large sauté pan, cook the turkey bacon. Add the shallots and garlic and sauté for 7 to 10 minutes over low heat.

    Add the beans and the reserved water to the bacon mixture.

    season with salt and pepper, and cover.

    immer for 5 minutes over low heat.
