1 lb beef fillet, preferably tenderloin
2 tbsp rice wine or sherry
1 tsp sesame oil
2 tbsp vegetable oil or other oil (do not use oil with strong taste such as olive oil)
3 tsp soy sauce
1 tbsp oyster sauce
1 tsp whole black peppercorns
2 cloves garlic
Salt, to taste
1 red chili, optional
1. Cut beef fillet into strips. Let it soak on the mixture of soy sauce, sesame oil, and rice wine for about 10 minutes.
2. Mince the garlic. Remove the seed from the chili and slice thinly. Crushed the black peppercorns.
3. Heat the oil in a wok until the oil is smoking hot. Add the beef and stir fry until it browns.
4. Add the garlic. Lower the heat to medium.
5. Add the oyster sauce, black peppercorns, chili, and salt.
6. Stir fry until all the ingredients are mixed well.
7. Garnish with vegetable and serve with rice.

Black pepper beef is one of the most popular Chinese food. This is similar to my mom's recipe, but she uses a lot more chili.
I love the sauce and it's easy to prepare...just make sure you have a pressure cooker to make the beef soft and tender.
