Tomato Basil Soup

We used frozen tomatoes, but the equivalent would probably be about 2 28oz cans of diced or crushed tomatoes
2 cups chicken stock
1 onion finely chopped
2 cloves garlic finely chopped.
1/2 lb bacon chopped
1 cup fresh chopped basil
salt and pepper
1 cup whole milk
Parmesan
You can use a slow cooker for this recipe if you would like. My mother in law recently broke hers so we used a soup pot on the stove top. In the bottom of the pot heat some olive oil, saute onion and garlic. Add bacon and cook until crisp. Drain grease. Add tomatoes, basil and chicken stock. Simmer on low for about 2-3 hours. Thirty minutes before serving add milk and heat through. Salt and pepper to taste. Serve with a sprinkling of parmesan cheese on top with crusty bread. Enjoy!!

Love this recipe! I'm a vegetarian, will leave out the bacon.
