40 Cloves Of Garlic Chicken~garlic Lovers~

4 lbs whole chickens,
1/4 cup olive oil
2 tablespoons olive oil
5 sprigs fresh Rosemary
40 garlic cloves, peeled
1/2 teaspoon salt
1 teaspoon black pepper
1/2 cup white wine ( optional ) but it taste better with wine
Preheat oven to 350 degrees F.
Dry the chicken with paper towels.
Season salt and pepper on the inside of the chicken.
Add the garlic cloves, 2 sprigs fresh Rosemary to the chicken.( inside the chicken and leave some around the chicken.
add all the wine/ & oil oil over the chicken.
Cover with aluminum foil ( just the top of the chicken with a foil cover so that you can check on the chicken and spoon juices over the chicken while roasting ) and bake for 1 1/2 hours.
Check the chicken and braise the chicken with the wine & oil oil over the chicken a few times while roasting,
Last 30 minutes uncover the chicken and let it roast for that golden color.
Also take out the garlic from inside of the chicken and place around the pan
so that the garlic can roast to a golden color & cooked mushy soft.
Add the rest of the rosemary for garish
Remove chicken from the oven, let rest for 5 to 10 minutes. Serve chicken drizzled with some of reserved pan juices.
What do you do with all that garlic?
You can make a spread with heavy cream.
Add roasted garlic in a blender with a few Tablespoons of heavy fresh cream, salt & pepper.
Spread on a toasted baguette .

You can also use pre-peeled garlic you can find it at your local market.
Remember the alcohol in the wine will burn out while roasting.( optional )
