Heirloom Tomatoes Pizza

8 sheets of phyllo dough
2 large heirloom tomatoes, thinly sliced
1 cup shredded cheese
1/2 cup olive oil
1 stalk green onion, chopped
1 stalk fresh basil leaves
1 tablespoon of dried italian herbs
salt and pepper
1) Preheat oven to 350F
2) Line baking sheet with parchment paper
3) Place 1st phyllo dough on parchment paper. Brush with olive oil and sprinkle with some shredded cheese. Repeat till all 8 sheets are layered on top of one another.
4) On the top layer, distribute sliced tomatoes evenly.
5) Sprinkle with dried herbs, chopped green onion, cheese, salt and pepper.
6) Bake in oven on the top shelf for about 20 mins, or till edges are golden brown and cheese has melted.
7) Remove from oven and sprinkle with fresh basil leaves. Serve hot.
