  • Ingredients


    1- Big lobster (Like the photo)
    1/4 cup mayonnaise
    Salt and freshly ground pepper
    1/8 cup finely diced celery
    3 tablespoons fresh lemon juice
    3 Pinches of cayenne pepper
    4 top-split hot dog buns
    2 tablespoons unsalted butter, melted





    Directions


    I had my lobster steamed at the market
    ( 15 mins ). Nice service ( 99 Ranch Market in Irvine Ca, )
    If your market does not have this service than
    Prepare a large ice-water bath for the lobster.

    In a very large pot of boiling salted water, cook the lobsters until they turn bright red, about 10 ~15 minutes. ( depends on the size & weight of the lobster )

    Using tongs or silicon gloves, thrust the lobster quickly into the ice-water bath for 2 minutes, then drain.
    Twist off the lobster tails and claws and remove the meat.

    Remove and throw away the intestinal vein that runs the length of the lobster tail.

    Cut the lobster meat into pieces and pat dry, then transfer to a strainer set over a bowl and refrigerate until very cold, at least 30 mins. ( meat must be cold )

    In a large bowl, mix the lobster meat with the mayonnaise and season add salt & pepper according to taste..

    Mix in the diced celery, lemon juice and cayenne pepper until well blended.

    Heat a large frying pan. Brush both sides of the hot dog buns with the melted butter and toast over medium heat until golden brown on both sides. ( do not burn the buns)

    Place the hot dog buns on a plate, fill them with
    the lobster salad and serve immediately.

    Add a side salad.

    Chef's Note
    some cooks like to add scallions, thinly sliced or cucumber, peeled, seeded and finely diced. The less veggie and more lobster is what we like.
    We want to taste the lobster!
    Use hot dog buns for the real
    McCoy!
    I tried to add my own photos of the Lobster rolls but all was eaten before I could take a photo! Oh yum!
