Pumpkin Spice Oatmeal

1/2 c. organic quick oats
3/4 c. cup water
1/2 c. organic pureed pumpkin
1 tsp. pumpkin pie spice
1/2 tsp. cinnamon
1 tsp. vanilla extract
dash of sea salt
2 packets Stevia
1/4 c. organic vanilla soy milk (or any other kind of milk) *optional
2 tbs Nuts About Granola Plain Jane Granola

Recommended Products

Cook oatmeal and water in the microwave for 90 seconds. Add remaining ingredients and stir until well combined. Add more or less milk depending on your desired consistency.

Pumpkin is such an amazing food, yet greatly underutilized. I buy canned pumpkin all year round and through it in a dish from time to time.
