Lemon Chickpeas As A Side Dish Shown With My Tabouli Recipe

2 cups dried chickpeas, soaked overnight and drained or open 2 cans of chickpeas and forget the overnight. If you need to have a side dish right away.
3 tablespoons
olive oil
1 onion, chopped

2 celery ribs, finely diced
2 cups dried chickpeas, soaked overnight and drained
2 rosemary sprigs and 2 thyme sprigs, tied together with string add to pan.
Kosher salt
freshly ground black pepper
1 medium onion, finely chopped
1/3 cup fresh lemon juice
Finely shredded zest from the lemons
2 garlic cloves, very finely chopped
1/2 teaspoon dried oregano

2/3 cup extra-virgin olive oil
1/2 cup finely chopped flat-leaf parsley add last before serving. Enjoy

In a large pan, heat the olive oil.

Add the chopped onion, and halved celery rib and cook over moderate heat, stir occasionally, until the vegetables are golden, about 8 minutes. Add the drained chickpeas,
the herb sprig bundle and enough water to cover the veggies and herbs, bring to a boil.

Reduce the heat and simmer over low heat until the chickpeas are tender, about 1 1/2 hours.(* not can chickpeas.if chickpeas are from a Can than just bring to a boil and continue with recipe )

Add salt and pepper and cook the chickpeas for 10 minutes longer if "dried" chickpeas.
Remove from the heat and cool
then drain the chickpeas.

Discard the herb sprigs, onion,celery.
Meanwhile, in a large bowl,
Add the finely chopped onion to the bowl , add the diced celery, lemon zest, lemon juice, garlic, chopped rosemary,dried oregano

Add the chickpeas and olive oil; season to taste with salt and pepper. Add in the parsley before serving.
Enjoy.
