Pesto Lasagna

Ingredients

1 pound lasagna noodles
1 cup shredded mozzarella cheese
2 cups pesto sauce
(see chef's note for pesto recipe)

Directions

1) Preheat oven to 375F.

2) Cook lasagna noodles. Drain well and coat it with olive oil so that they don't stick to one another.

3) Start layering lasagna in a baking dish. First add a layer of lasagna sheet. Spread pesto evenly over sheet. Sprinkle cheese on top of pesto. Then repeat with another layer of lasagna sheet. Repeat till you get to the top of the baking dish. Usually that's about 8-12 layers.

4) Top layer should have pesto and with cheese sprinkled on it.

5) Put dish on the top rack. Bake for 20-25 mins till bubbly around edges and cheese has melted.

6) Let lasagna stand for at least 20 mins before cutting, else all layers will fall apart when it's too hot.

Who would have thought these are all veges... I've tried it and added more cheese... loved it!
