1 Salmon Fillet
2-3 Lemons
1 Onion
1 Stick of Butter
1 Jar of Capers
Fresh Dill
White Wine
Salt and Pepper
Remove skin from side of Salmon, best done with a fillet knife and take your time. Lay fillet in center of large piece of aluminum foil. The foil needs to be large enough to cover sides and ends of fillet. You will later use this to wrap the fish in for cooking, so overlapping two pieces may make wrapping easier. Slat and pepper fish lightly. Slice stick of butter into smallish pats of butter, place on top of fillet. Slice lemon and onion, place on top of fillet. Place fresh dill sprigs on top of lemon and onion. Put about 1/4-1/2 a cup of white wine. Bring sides of foil up, and roll together downwards towards fillet. fold ends in, while rolling. Most important is to create a pouch, so it needs to be as tight as possible to prevent any moisture from getting in. Place sealed pouch on top of plastic type cutting board. Place cutting board on top rack of dishwasher, and run through complete Normal cycle with NO soap.
