Pork Sausages With Creamy Mashed Potato

1 onion, finely chopped
1 carrot, finely chopped
1 stick celery, finely chopped
2 garlic cloves, crushed
2 tblspns olive oil
4-6 pork sausages
150ml red wine
410g can tomatoes
2 tblspns sun dried tomato paste
½ tspn sugar
1 tspn dried oregano
few torn basil leaves

1) Heat oil, add sausages and cook for 2-3 minutes on each side. Remove from pan and set aside.

2) Tip all the vegetables and garlic into the pan and cook gently for 5 minutes. Splash in the wine, then pour in the tomatoes, tomato paste, sugar and oregano. Season well with salt and pepper. Simmer, covered for 15 minutes.

3) Return the sausages to the pan and cook for a further 15 minutes. Stir in the basil. Serve with mashed potato.
