Pork Roast With Cherry Sauce

1 (4-5 lb.) pork loin roast, boned, rolled and tied
1/2 tsp. salt
1/2 tsp. pepper
Dash of thyme
Cherry Sauce:
1 c. cherry preserves
1/4 c. red wine vinegar
2 tbsp. light corn syrup
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 tsp. salt
1/4 c. slivered almonds (optional)
1) Rub roast with mixture. Place on rack in pan.
2) Roast uncovered at 325 degrees for about 2 1/2 hours.
3) Combine all in saucepan (except almonds - optional).
4) Heat to boiling and simmer 2 minutes. Add almonds.
5) Spoon over roast and continue roasting for 30 minutes. Baste several times.
6) Sauce may be simmered in saucepan for 20 minutes and served on the side.
