4 Chick Breasts or Thighs optional (skinless)
1 cups bread crumbs
1 cup club crackers crushed
1/2 teaspoon each onion powder,garlic powder,paprika,poultry seasoning,parsley,basil,sugar and lemon pepper.
2 tablespoons Minced Onion flakes
3 large eggs beaten
3 Tablespoons cream
salt and pepper to taste
1 cup cake flour
Wash chicken, dry, rub with flour and set in refrigerator for 10 Minutes wrapped in a towel.
In separate bowl beat your eggs, cream, and all your spices- onion powder, garlic powder,paprika,poultry seasoning,parsley,basil,sugar and lemon pepper, set aside.
In another bowl combine your bread crumbs , club crackers and minced onion flakes.
Get your chicken from refrigerator and rub with flour, then dip it into your egg spice mix, and then into your bread crumb mix, back into your egg mix, and back into your bread crumb mix set on greesed cookie sheet salt and pepper to taste.
Bake in a 275 oven covered for 1 hour, then turn your over to 375 and uncover chicken cook for 30 Minutes uncovered then turn chicken over and cook for remaining 30 Minutes uncovered, remove and serve on a lettus bedded platter.
Looks freaking crispy! I love love love fried chicken, and the flavors you added sound great!
