4 slices of bacon
4 eggs
1/2 cup quick-cooking grits (not instant)
1 1/2 cup sharp white cheddar cheese, shredded
1 teaspoon garlic powder
2 tablespoons scallions, chopped
Your favorite hot sauce (optional)
Salt & pepper, to taste

Pan-fry bacon until crisp, drain on paper towels, then chop into bite-sized pieces.
Cook grits according to package directions, add cheese, garlic powder, salt and pepper, stir until cheese is melted and ingredients are combined.
Prepare/cook eggs your favorite way. I prefer them scrambled for this recipe.
Divide grits between 2 bowls, top with eggs, chopped bacon and scallions.
Sprinkle with hot sauce to your taste.

I first had grits in Alabama last year and fell in love with them. They are not easy to find in southern California so I order a package every couple months online.
