Fried Potatoes With Beef And Onion

7 potatoes pealed and sliced
1 large Onion Quarted and separted
8-10 ounces beef sliced into very thin strips and short about 1-2 inches long
5 cloves garlic chopped
2 green onion tops chopped
4 cups cooked rice
1/2 tea. black pepper
1/2 teaspoon onion power
1/2 cup fish sauce
4 tbs. olive oil
oil for frying potatoes

Put your rice on to cook first.
In a medium sized bowl put sliced beef, black pepper, onion powder,2 cloves chopped garlic, and fish sauce. put into refrigerator while your preparing the potatoes.
Next peel potatoes slice and fry like you would potatoe chips in oil.
arrange fried potatoes on a platter, set aside
In a skillet put your olive oil and the rest of your chopped garlic, this will season your oil for your beef. beef needs to be fried on high and quick so it doesn't get tough. when your oil and garlic gets hot, put your beef mixture into hot pan stir fry about 1-2 minutes, remove from pan put into a clean bowl,set aside. With a little more olive oil into your pan add your quartered and separeted onion until they become somewhat transparent, then pour your beef back into pan with onion stir a few seconds turn off heat and pore over your potatoes top with green onions. Serve over cooked rice.
