Craft Butternut Squash

* 3 butternut squash (about 10 lbs), halved and seeded
* 5 tbl unsalted butter
* 2 tbl dried rosemary
* 2 tbl dried thyme
* 1 tsp grated nutmeg
* Kosher salt and pepper
* 2 tbl honey
1. Pre-heat the oven to 350 degrees. Place the squash, cut side up, in a large roasting pan. Divide 3 tbl butter among the squash halves, then add rosemary, thyme, salt and pepper.
2. Cover the pan with aluminum foil and slowly roast until very soft, about 1 1/2 hours.
3. Puree the squash in a food processor, working in batches. While still warm, whisk in the rest of the butter or additional spices.
