1 Artichoke
1 clove garlic
Balsamic Vinegar
Olive Oil
Salt
1) Preheat oven to 400F.
2) Trim the stem off the artichoke. This way, the artichoke can sit flat upright.
3) Trim the top off the artichoke to create a flat surface.
4) Use a scissors to cut off the sharp points of each leaf.
5) Rinse the artichoke and open up the artichoke a bit with your hands.
6) Sit the artichoke on a piece of aluminum foil, large enough to wrap the whole artichoke.
7) Drizzle plenty of olive oil in to the artichoke. Followed by drizzling balsamic vinegar.
8) Slice garlic into 2-3 slices and stuff them into the artichoke. Then sprinkle some salt.
9) Wrap the artichoke in aluminum foil. Roast in oven for about 45 mins - 1 hour.
10) This step is optional. When the roasted artichoke is cool to handle, slice it into 2. Drizzle some balsamic vinegar on it then put it on the grill for 3-4 mins or under a broiler for 3-4 mins.
I love the Roasted Artichokes at Cheesecake Factory and tried to replicate it at home. This recipe is darn close :)
I'm not really an artichoke fan but this one change it all!
