Multi-bean Soup

* 1 bag of dried mixed beans
* Olive oil
* 8 stalks of celery, chopped
* 8 carrots, peeled and chopped
* 3-4 small onions, diced
* 8 cloves garlic, minced
* Ham seasoning from bag
* (optional) Ham, diced

1. Soak beans overnight, or boil for 2 minutes then simmer and drain per package instructions.
2. In a large pot or dutch oven heat olive oil then add garlic and onions. Add carrots and celery.
3. Add 2 quarts water, ham concentrate, and diced ham if desired. Bring to a boil, then simmer for at least 2 hours.
