Breadcrumb Crusted Shrimp With Herb Mayonnaise

For the shrimp:
* 1/2 cup flour
* 1 tsp kosher salt
* 1/4 tsp black pepper
* 2 eggs
* 1 1/2 cups breadcrumbs (I used Italian style)
* 2 tsp paprika
* 1 1/2 tsp dried thyme
* 1 lb large shrimp (I used tail-on frozen shrimp that were peeled and deveined)
* Olive oil
For the herb mayonnaise:
* 1 1/2 cups mayonnaise
* 1/4 cup sour cream
* 1 Tbl dijon mustard
* 1 Tbl dried tarragon
* 1 Tbl dried parsley
1. Preheat oven to 475 degrees. Cover a baking sheet with foil.
2. Line up 3 prep bowls. In the 1st bowl, combine flour, salt and pepper. In the 2nd bowl, whisk two eggs. In the 3rd bowl, mix breadcrumbs, paprika, and thyme.
3. Move each shrimp between the bowls, assembly line style: dredge in flour (shake off excess); dip in egg; coat with breadcrumbs. Place shrimp on baking sheet.
4. Drizzle shrimp with olive oil, then bake for 10 - 12 minutes until crisp and golden.
5. As the shrimp are cooking, make the herb mayonnaise by mixing ingredients together.
