Bacon-wrapped Saffron Lime Shrimp

1 dozen jumbo shrimp (largest you can purchase, cleaned)
1 lb bacon (at least 12 strips)
2 limes (juiced)
1/4 C olive oil
2 cloves garlic (minced)
1 pinch saffron
1 pinch sugar
kosher salt
pepper
Recommended Products
Mix lime juice, olive oil, sugar, saffron and garlic in a microwave safe bowl.
Heat in microwave approx 30 seconds to help the saffron bloom.
Sprinkle in a dash of salt and pepper, and let cool so that it won't cook the shrimp if touched.
Marinade Shrimp in liquid (in fridge) for 30-minutes to an hour, depending on how hungry you are ;)
Remove from fridge, and wrap each piece of shrimp with a strip of bacon (may need to be trimmed depending on the size/cut of bacon and size of shrimp.
Broil on sheet pan in oven for approx 5 minutes, or until bacon is caramelized (can also be grilled on skewers for a fun alternative).
Eat and enjoy (often good with a variety of sauces such as a chipotle aoli)!

Chef's Note & Story
Wanted to make something fun for a that could be prepared in advance but cooked outdoors. I have adjusted it since to be cooked in a conventional oven, but the flavors pop either way.
I wanted to add that you can sub maple syrup for sugar, just use a half tsp. The maple complements the bacon very well.
