Spanish Rice With Bacon

6-slices Applewood bacon cooked
3/4 c. rice
14.5 oz. mexican diced tomatoes
14.5 oz. tomatoe sauce
1-med. diced sweet onion
1/2 med. green pepper-chopped
1-tablespoon brown sugar
1-c. water
1-tablespoon Worcestershire sauce
1-teaspoon salt
1-teaspoon of chili powder
1/8 teaspoon of pepper
Optional: Dash of hot pepper sauce

Recommended Products

Cook Bacon until crisp, drain and crumble. Reserve 3 tbsp. of bacon drippings (fat). In bacon drippings saute onion & green pepper until tender. Stir in tomatoe sauce & diced tomatoes, followed by the water, rice, brown sugar,Worcestershire sauce, salt, pepper, chili powder, and hot sauce.Cover and simmer for about 25-30 minutes or till rice is done. BEST PART= Crumble Bacon on top and follow with shredded cheddar cheese, cover for about 5 mins. Cheese will be melted!!

I have cooked this Spanish Rice/Bacon Recipe for over 35 years and it still gets raves! Great side served with Tacos, Enchilada's, or in a taco salad, or Burrito. One time just tried adding the Bacon and gave the dish a great smoky & slightly sweet taste. People are surprised to know the special ingredient is the smoked Applewood Bacon.Most people don't expect Bacon in Spanish Rice!!!
