Duck Salad With Apricot Dressing
Ingredients

4 pieces of buttercup lettuce
1 cup shredded cucumber
1 cup shredded honey-dew melon
1 cup shredded cooked duck
1/2 cup thinly sliced red onion
Garnish
-------
1 tablespoon roasted peanuts, chopped
1 tablespoon toasted sesame seed
Dressing
--------
4 tablespoon sour plum sauce
4 tablespoon apricot jam
1 tablespoon sweet chili sauce
1 tsp vinegar
1/2 tsp sesame oil
1 tsp sugar (optional, only add if you like sweet dressing)
Recommended Products
1) Mix all ingredients for dressing in a pan and cook over low heat.
2) Give the shredded cucumber and honey-dew melon a good squeeze to remove the excess water content.
3) Mix all salad ingredients, except for the buttercup lettuce.
4) Arrange butter cup lettuce on a serving plate. Place mixed salad ingredients on top.
5) Drizzle warm dressing over the salad. Sprinkle with garnishes before serving.

I'm not really a duck fan and I'm not sure if I'm going to eat a duck again. So I'll just have to use chicken on this one. The dressing will still make it as flavorful...I hope.
