Raw Oysters With Cucumber Mignonette Sauce

1/2 cup rice wine vinegar
1 shallot, minced
1-inch piece fresh ginger, peeled and grated
1/2 cucumber, peeled and grated
Dash of freshly ground black pepper
1 handful fresh cilantro leaves, chopped

1) Combine all ingredients. Cover and chill for at least 1 hour before you plan to serve.

2) Spoon 1/2 tsp on each raw oyster, grilled oyster or clams before serving.
