Dutch Slaw

3-4Lbs potatoes peeled and quartered
1 lb. Bacon cut into 1 inch pieces
1/2 med. sweet onion,minced
2 eggs boiled and quartered
1/2 head lettuce,shredded
1/8 to 1/4 cup apple cider vinegar

Boil potatoes
drain
put back in pot,set aside
cook cut up bacon to crispy
tilt pan to separate bacon and grease
add onion to potatoes,stir
add bacon,stir hard
add all bacon grease, stir
add eggs, stir well.
Place lettuce all over top
sprinkle vinegar all over,stir.
Let sit 5 min, enjoy!!

This recipe has been handed down from my husbands grandmother. She was from Holland and this dish was an economical dish during very hard times, it has been in his family for many years. I am privileged that she taught me how to make it. It was very hard to get the amounts exact since we don't really measure. I hope you enjoy it as much as our family does!!
