Pineapple-planked Prawns
1 Large pineapple, peeled and cored
1 tbsp. Sesame oil
3/4 lb. Uncooked large shrimp (peeled and deveined)
8 Bamboo skewers soaked in water for 10 minutes
2 tbsp. Soy sauce
2 tsp. Sesame oil
1 tsp. Granulated sugar
1 tsp. Wasabi paste
1) Cut pineapple lengthwise into eight 1/2 inch (12 mm) thick wedges and brush with sesame oil.
2) Grill on direct medium heat for about 2 minutes per side until grill marks appear. Leave pineapple on the grill to continue cooking.
3) Thread shrimp onto skewers. Combine remaining 4 ingredients and brush over skewers.
4) Grill on direct medium heat for 1 minute per side, brushing with any remaining soy sauce mixture.
5) Place shrimp skewers over pineapple wedges and cook for about 2 minutes until shrimp turn pink.
