Tuna Stuffed Potatoes
4 Medium red potatoes (with peel)
1 tsp. Cooking oil
1 cup Flaked leftover cooked salmon
or other fish)
1/4 cup Grated medium Cheddar cheese
3 tbsp. Sour cream
2 tbsp. Finely chopped dill pickles
2 tbsp. Chopped fresh chives
1 tbsp. Lemon juice
3 tbsp Grated medium Cheddar cheese
1) Rub potatoes with cooking oil. Arrange on ungreased baking sheet.
2) Bake in 375°F (190°C) oven for 50 to 60 minutes until tender.Let stand until cool enough to handle.
3) Cut 1/4 inch (6 mm) lengthwise off top of each potato. Discard tops. Scoop out pulp into medium bowl, leaving shells about 1/4 inch (6 mm) thick.
4) Set shells aside. Mash pulp until no lumps remain. Put 3/4 cup (175 mL) mashed potatoes into separate medium bowl.
5) Add next 6 ingredients to mashed potatoes. Mix well. Divide and spoon mixture into potato shells.
6) Divide and sprinkle second amount of cheese over each. Arrange on same ungreased baking sheet.
7) Bake in 375°F (190°C) oven for about 30 minutes until filling is heated through and cheese is golden.

I made these tonight. Yummy!! I had a little stuffing left over, so I made patties, like crab cakes, fried in a pan. Also, I guess you could substitute chicken for the fish.
