Malva Pudding
2 Tablespoons of butter (Heaped)
6 Tablespoons of apricot jam
2 Eggs
1 Cup of flour
1 Teaspoon baking powder
1 Cup of sugar, The browner the better
1 Cup of milk
Sauce to pour over the cake:
1 Cup sugar
1 cup butter
1 ½ Cups cream
60 ml Hot water
1. Whisk together your milk, butter and sugar till white add eggs and jam, beat
2. Sieve in flour and baking bowder and intermediately add milk.
3. Pour into cake tin or oven dish (greased of course) cover with tin foil and bake in a pre-heated oven for 35 – 45 minutes.
Sauce:
1. Combine the first two ingredients in a pot over a low heat until the sugar dissolves and starts to turn slightly brown / caramelize.
2. Pour these two into light brown sugar mixture and boil for 5 minutes.
3. Once your Cake has come out the oven remove tinfoil and poke several holes on top and pour the hot caramel sauce evenly over the surface allowing the cake to absorb.
4. Garnish with some sliced peaches and a dusting of icing.

To check if a cake is finished cooking slide a clean knife through the middle and pull out, if it comes out clean then cake is ready, if it comes out with raw mixture continue to cook.
