Not For Kids Mac And Cheese

1 lb. box of Cavatappi pasta
1/2 lb. bacon, cut in 1" pieces
8 ounces sharp Cheddar cheese, shredded
5 ounces swiss cheese, shredded
3 ounces gorganzola, shredded
3 ounces romano cheese, shredded
1/2 cup all purpose flour
4 cups milk
1 tsp truffle salt
1/4 tsp. freshly ground pepper
1/4 tsp. ground nutmeg
4 tbl. butter, separated
1/2 cup panko crumbs
1 tomato, optional

Preheat oven to 350 deg.
Boil pasta according to package instructions, less 3 minutes. Drain, put aside.

Brown bacon in a medium saucepan, remove to a plate. Measure drippings, if you don't have 6 tablespoons add melted butter till you have 6. Add flour and stir until it takes on a faint bit of color, about 3 minutes. Heat milk in microwave until hot and add to flour stirring continuously with a wisk. After sauce has thickened,turn down heat to low and add the cheeses. Stir until melted. Add salt, pepper and nutmeg. Spray a 9 X 13 cassarole dish with cooking spray. Dump in pasta, add sauce and bacon, mix thoroughly.
Melt 2 tablespoons of butter and add to panko crumbs, spread evenly on pasta dish. Thinly slice a ripe tomato and lay on top of panko coating. Add a sprinkle of truffle salt and a grind of pepper to each slice. Bake in oven for 30 minutes, uncovered until starting to get a little brown. Enjoy the leftovers!
