Sausage-vegetable Fritata
½ White Onion, sliced along the lines
2 Cloves of Garlic, sliced
4 White Mushrooms, sliced or quartered
1 Large Tomato
1 Handful of fresh spinach, chopped
¼ Cup Feta Cheese
4 Large Eggs
¼ Cup Milk
Salt and Pepper
Herbs and seasoning to taste
Vegetable Oil for sautéing
1) Preheat oven to 350degrees.
2) In a small bowl, beat the eggs with a fork until fluffy, add the milk and stir to mix.
3) Place a heavy sauté pan over low heat and add just enough oil to coat the bottom.
4) Add the onions and cover, stirring them every 5 to 10 minutes until soft and caramelized.
5) Add garlic and mushroom,increase heat to medium and sauté until browned.
6) Add the tomatoes, reduce heat and stir to combine.
7) Toss in the spinach.
8) Toss to wilt and spread vegetables to evenly coat bottom of pan.
9) Season the egg mixture and pour over vegetables in pan.
10) Shake gently to distribute eggs evenly.
11) Top with cheese and pop the pan into the oven for about 12 minutes.
