3 cup(s) flour (all-purpose)
1/2 teaspoon(s) salt (iodized)
2 teaspoon(s) baking powder
1/2 cup(s) sugar (granulated)
1 large egg
1 cup(s) milk (whole)
1/4 cup(s) butter - melted
2 teaspoon(s) orange zest
1/4 cup(s) orange juice
2 cup(s) apples - peeled, cored and diced
1 teaspoon(s) vanilla extract
6 cup(s) vegetable oil - for frying
2 tablespoon(s) cinnamon (ground) - for coating
1/2 cup(s) sugar (granulated) - for coating
1) Combine flour, salt, baking powder and first addition of sugar. Make a well in center of mixture.
2) Combine egg, milk and butter, stirring well; stir in orange zest, juice, apples and vanilla.
3) Add wet ingredients to flour mixture, stirring just until combined.
4) Pour oil to a depth of 2 inches into a large Dutch oven; heat to 350 degrees. Mix 2 Tbl. of cinnamon and 1/2 cup of sugar, and reserve.
5) Drop batter by rounded tablespoonfuls into hot oil; fry fritters in batches 1 1/2 minutes on each side or until golden brown.
6) Remove with a slotted spoon and roll in cinnamon/sugar mixture.
7) Cool finished fritters on paper towels. Continue until all batter has been used.
