Blue Cheese And Bacon Deviled Eggs
4 whole eggs
2 teaspoons mayonnaise
1/2 teaspoon Dijon mustard
2 slices cooked bacon (crumbled and divided)
1 tablespoon crumbled blue cheese
1 teaspoon chopped fresh parsley
1) Place eggs in large pot in a single layer.
2) Add cold water covering the eggs by an inch.
3) Bring the water to a boil; cover and remove from heat.
4) After 10 minutes drain and run cool water over the eggs.
5) Allow to cool then peel and halve lengthwise.
6) Place yolks in a medium bowl; using a fork mash with mayonnaise and mustard.
7) Stir in half of the crumbled bacon the blue cheese and parsley until combined.
8) Season with salt and freshly ground black pepper.
9) Spoon the mixture into egg halves and top with remaining bacon pieces.
