Classic Roasted Chicken Recipe

1 chicken, halved or quartered
1 clove garlic, minced
1 tablespoon butter
freshly ground black pepper
Vegetables:
2 pounds potatoes, cut into 1-inch chunks
4-6 carrots, cut in 2-inch pieces
3-4 celery sticks, cut in 2-inch pieces
1 cup chicken broth
3 cloves garlic, minced
2 tablespoons olive oil
salt and pepper to taste
1) Preheat oven to 425F/220C and lightly oil a roasting pan.
2) Wash chicken and pat dry. Combine garlic, butter, and pepper.
3) Separate the skin and rub butter mixture underneath each piece. Arrange chicken in pan.
4) Combine potatoes, carrots, celery and garlic, and toss with olive oil.
5) Pour veggies over chicken and sprinkle with salt and pepper.
6) Pour chicken broth over chicken and vegetables.
7) Roast, basting occasionally for about 1 1/4 to 1 1/2 hours or until chicken thigh reaches a temperature of 165.
