Ice Cream Wafflewiches

1/2 cup miniature dark chocolate chips
8 waffle
1 cup ice cream

1) Toast frozen waffles, then let cool.

2) Place the chocolate chips on a plate.

3) Arrange 4 waffles on a work surface, and, using a 1-ounce ice cream scoop, top each cookie with 1 scoop ice cream

4) Top the ice cream with the remaining waffle.

5) Press down gently until the ice cream covers the waffle.

6) Roll sides of the waffles in chocolate chips, pressing gently to adhere.

7) Place waffles on a baking sheet, and freeze for about 10 minutes or until firm.

8) Dust with confectioners' sugar, if desired; serve.
