Corn Meal 5 lbs
Water 2 ¾ Gallons
Salt 6 T
Chili Powder 4 T
Ground Beef 28 lbs, 2 oz
Onions (dry, minced) 2 lb
Bell Pepper (finely chopped) 1 lb
Garlic 3 T
Shortening (melted) 8 oz
Tomatoes (canned, crushed) 12 lb, 12 oz
Chili Powder 4 ½ oz
Salt 3 oz
Cook ground beef until browned, drain
Combine corn meal, water, salt (6T), and chili powder (4 T) and bring to a boil
Reduce heat and simmer 25 mins, stirring frequently until a stiff paste is formed. Set aside.
Saute onions, peppers and garlic in shortening for 5 mins.
Add chopped ground beef, cook another 10 mins, stirring frequently.
Add tomatoes, chili powder (4 ½ oz) and salt (3 oz) to meat mixture, simmer 15 mins. Stirring frequently.
Stir 3 qt corn meal paste into bottom of each 18x24 pan. Pour 2 gallons of meat mixture over corn meal in each pan.
Spread remaining corn meal over the top.
Bake 45 mins, or until top crust is browned.
