Mini doughnuts
1 1/3 cup cake flour
2/3 cup sugar
1 1/2 teaspoon baking powder
a pinch of ground nutmeg
pinch of salt
2 small eggs
1 tablespoon butter a plus 2 teaspoons butter
1 teaspoon vanilla
2 tablespoons cocoa powder ( more if needed
Directions for Donuts: preheat oven at 400 degrees
Oil or spray the mini donut pan with a baking spray. Set aside.
In a large bowl mix flour, sugar and baking powder, nutmeg and salt.
Beat the eggs and pour into the mixture. Melt butter and cool than pour into the cake mixture.
If making chocolate donuts divide the batter into two parts . Add cocoa powder to one part and mix well.
Use a pipping bag or a plastic sandwich bag and cut a small hole on the corner of the bag. Spoon into batter into the donut hole pan. Bake 6 minutes or until done, when the donut springs back to touch.
Glaze
1/2 cup milk
2 cups white power sugar
1 drop of red food coloring ( for light pink )
In a sauce pan water the milk and add the powder sugar. ( add more if needed ). Remove from heat and stir. add the vanilla and food coloring
For chocolate frosting
For chocolate melt semi sweet chocolate chips with a tiny dab of butter and a few drops of milk. Mix well. ( for gloss )
