Porcupines

Ground Beef 30 lbs
Chopped Onions 1 lb, 8oz
Salt 6T
Rice (parboiled) 3 lbs
Chopped Bell Pepper 1 lb, 8oz
Chopped Garlic 1 ½ T
Tomato Paste 4Q
Water 8Q

Combine ground beef, onions, salt, rice, bell pepper and garlic (do not overmix)

Shape into 3 ½ inch balls (1 ½ inches in diameter)

Place on cookie sheet pan

Mix tomato paste and water, pour over each meatball.

Bake 1 ½ hours or until done (turn meatballs at least once during cooking)
