4 boneless skinless chicken tenderloins
1 cup corn masa flour
1 small onion
1 jalapeno
1/2 bunch cilantro
1/2 block quesadilla cheese
1 cup water
salt
blackening seasoning
olive oil
oil spray
wax paper
1. To make your own fresh corn tortillas in a mixing bowl, combine the corn masa flour, salt & hot water.
2. Flatten individual tortillas using a tortilla press with wax paper coated with a cooking oil spray.
3. Using a cast iron skillet, fry your corn tortillas.
4. Grill your chicken in a separate skillet with a blackening seasoning & olive oil.
5. Shred the quesadilla cheese, chop the onions, cilantro & jalapenos
6. Dice the chicken once it is fully cooked.
7. BUILD YOUR TACOS: Tortillas, chicken, quesadilla cheese, onions, cilantro, jalapenos!
