1 package medium or firm tofu
soy sauce (I use lower sodium)
Red Star Nutritional Yeast
good quality frying oil
-Pour a enough oil into a frying pan to cover bottom and a bit more if you like things more fried tasting, and turn to medium heat
-cut the tofu block into slices of about 1/4" thick or a bit thinner, but not thicker
-get out 2 saucers and pour about 1 T of soy sauce into one, and about 2 T of the yeast into another.
-dip each pieces of tofu, both sides, into the soysauce
-dip each piece into the nutritional yeast, coating all sides
-place into hot oil and fry on one side until golden brown, turn over and do other side
-do this for all slices, keeping track of the ones you put in first, turning them over.
-the pieces should be quite firm and crispy but not hard. the thinner the slices the crispier they will be. As you try making this a few times, you'll find the right consistency for your taste.

Chef's Note & Story
Nutritional yeast is sometimes called flake yeast. It has a nutty flavour that when combined with the saltiness of the soy sauce and the frying, ending up having a similar taste and mouth feel to fried chicken. Kids really like this, even ones that don't usually eat tofu.
