Juicy Bbq Pork Jerky (Also Known As Bak Kua)

Ingredients

1 lb. minced meat, with some fats
1-1/2 tbsp fish sauce
1 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp cooking wine
1/2 cup sugar
Pinch of white pepper

Directions

1. Put minced meat in a big bowl. Add in the rest of the ingredients. Mix well. Let meat marinate for late least an hour, or overnight.

2. Prepare a piece of parchment paper the size of a large baking sheet.

3. Put some marinated minced meat on the parchment paper. Cover with a big cling/saran wrap and use a roller to roll the minced meat to 2mm thick. (*Do not use aluminum foil as it will stick!) Repeat till all the meat is rolled out, like a piece of paper.

4. Put the parchment paper with minced meat, on a baking tray.

5. Bake in preheated oven at 250F for 20 minutes. Then increase the temperature to 350F and bake for about 20mins, turn the piece of meat over and continue baking for another 15mins. Keep a close watch, as it burns easily at this stage.

6. Then turn on the broiler for about 5 mins so that the meat can be burnt a little.

7. Remove from oven, cool and cut into pieces.
